摘要
以燕麦β-葡聚糖为原料,用物理化学、分光光度法研究了燕麦β-葡聚糖物理化学性质、与刚果红结合的性质以及其持水性。实验结果表明:燕麦β-葡聚糖在波长190~870 nm范围,无吸收峰;与刚果红结合的质量比为4∶1;吸水率为(231.30±9.07)%。因此燕麦β-葡聚糖是能与刚果红特异性结合且有很强的吸水能力的不含醛基的白色水溶性多糖。
Oat β-glucan was used as raw materials;its physical and chemical properties,Congo red binding nature and water holding capacity were researched with physical chemistry and spectrophotometry methods.The results showed that: oat β-glucan had not absorption peak at a wavelength of 190-870nm;the mass ratio of binding Congo red was 4∶1;and the ratio of water absorption was(231.30 ± 9.07)%.So oat β-glucan had the specificity of bonding Congo red and the strong water absorption capacity;also it was a white water-soluble non-aldehyde polysaccharide.
