摘要
运用化学发光分析法研究了黑米色素抗活性氧能力大小,测定了黑米色素对全血化学发光的抑制和清除O-2、·OH、H2O2的作用。结果表明,黑米色素对全血化学发光有较大的抑制作用,即对由细胞体系产生的活性氧有较大的消除作用;对非细胞体系产生的活性氧化也有一定的消除能力。
he inhibitory effect of pigment from black rice on active oxygen was studied
by
using chemiluminescence.The inhibition on cheminescence in whole blood and the scavenging
effects on peroxide anion radicals,hydroxyl radical and hydrogen peroxide were measured.The
results showed that the pigment from black rice markdly inhibit chemiluminescence in whole
blood,and scavenge the active oxygen produced by noncellular systems to a certain
extent.These results suggest that the black rice has the funcetion of dietetic therapy,and the
pigment from black rice is one of the better free radical scavengers in black food.
