摘要
针对目前有争议的脉冲电场灭菌机理,通过对电穿孔和电崩解过程的分析,认为电崩解机理更能够说明脉冲电场灭菌的原理和过程。通过对两种细菌失活模型Hülsheger&Niemann模型和Peleg模型进行数学分析,认为这两种模型其实质是相同的。在这两种模型中,细菌残活率指数岁电场强度的呈线性变化。通过实验研究,提出了一种不同的细菌失活模型,其细菌残活率指数随场强升高呈指数趋势变化,对这种新模型与目前常用的模型之间的关系进行了分析说明,常用的两种模型是该模型在一个局部的线性化近似表达。
According to the disputed mechanism of bacterial inactivation by pulsed electric field(PEF),by analyzing the process of electroporation and electric breakdown,it is considered that the principle and process of bacterial inactivation by PEF can be explained clearly by electric breakdown theory.It is considered that the two bacterial inactivation models(Hülsheger Niemann model and Peleg model) are same in essence after analyzing them by analyzing them.In the two models,the bacterial survival index changes linear if electric field intensity increases.By experimental research a new bacterial inactivation model is presented.In the new model,the bacterial survival index changes exponentially if electric field intensity increases.The relationship of the new model and the practical model is analyzed.It is considered that the linear model is a local linear approximation of the exponential model.
