摘要
本文研究了麦芽糖的理论与淀粉液化程度的关系,当应用麦芽糖生成酶可水解麦芽三糖时,麦芽糖的产率为[0.9775-9DE/(20-2DE)]×100%。当所用麦芽糖生成酶不能水解麦芽三糖时,麦芽糖的产率为[0.9325-27/(20-2DE)]×100%。理论关系式与实验结果良好。
The relationship between the yield of maltose liquefaction degree of starch is studied and it is found that ifthe maltogenic enzymes used can hydrolyze maltotriose the yield of maltose is [0. 9775 - 9DE/(20 - 2DE)] x 100% or the yield is [0. 9325 - 27/(20 - 2DE) ] x 100 %. The experience results agree well the theoretical relationship.
