摘要
异黄酮是一类具有重要生化活性的化合物,在大豆和大豆制品中含量丰富。本文综述了大豆及大豆制品中异黄酮的研究现状,主要包括:①大豆和大豆制品中异黄酮的结构、种类分布和含量;②品种和栽培环境对大豆中异黄酮含量和种类分布的影响;③加工对大豆制品中异黄酮含量和种类分布的影响;④大豆异黄酮的生理功能。
Isoflavones have important biochemical activities and are rich in soybeans and soybean products. In this article, the authors outline current researches. The aspects considered included: ①structure, kind distribution and content of isoflavones in soybeans and soybean products; ②effects of crop environment and variety on kind distribution and content of soybean isoflavones; ③ effects of processing on kind distribution and content of soybean product isoflavones; ④ physiological function of Soybean isoflavones.
