摘要
随着对脂肪研究的深入,人们认识到脂肪酸与机体的健康有着密不可分的关系。而对于功能性的不饱和脂肪酸的研究更是国内外的研究热点。本文着重对功能性不饱和脂肪酸的分类、来源、合成途径及生物学功能的研究进展进行了阐述。
