摘要
对世界范围内海洋鱼油资源利用现状与发展趋势进行了综述和分析。海洋鱼油富含EPA(二十碳五烯酸)和DHA(二十二碳六烯酸)等ω-3多不饱和脂肪酸,具有众多优良的生理功能鱼油产品广泛应用于化工、饲料、保健食品、药品等行业,市场规模逐渐扩大。世界深海鱼油资源整体稳定,但需求量快速上升。鱼油加工工艺逐渐成熟,新产品及新工艺的开发与应用受到广泛重视。
Marine fish oil rich in EPA（eicosapentaenoic acid） and DHA（docosahexaenoic acid） and other ω-3 polyunsaturated fatty acids,has a number of excellent physiological function.Fish oil products are widely used in chemical,feed,healthy food,pharmaceutical and other industries.The application status and development trend of marine fish oil in the world were reviewed and analyzed.The market of fish oil products was gradually expanding in recently years.The world＇s marine fish oil resources were stable overally,but the demand increased rapidly.Fish oil processing technology was developed to mature,and the development and application of new products and new technology was paid extensive attention.
