The results of comparison on 7 extraction methods of leaf protein (LP) showed that heat
coagulation after acidification is a better method. Fresh leaves were washed and then thoroughly
crushed for 3 min (the ratio of plants to water is 1∶3). The filtrate was heated to 95℃ for 5 min
after acidification (pH 4) and then centrifugalized (4 000 r/min) for 10 min. The yield of LP, protein
content in LP and extraction rate of protein were the highest.
