摘要 研究了木瓜蛋白酶对螺旋藻的水解作用。结果表明温差破壁与酶解相结合效果最佳。最佳反应条件为:E/S=1.2%,pH6.5,60℃,反应时间3.5h。 <Absetract> Spirulina was hydrolysed under various condiions using papain. It was found that the temperature difference failure cell wall extraction and then enzymatic hydrolysis of spirulina was the optimun methoid. The experiment results showed that the optimun condition of hydroysis was: E/S = 1. 2 %, pH6. 5, 60℃, 3. 5h,after the temperature difference failure cell wall.
