江汉水牛屠宰性能的测定 被引量:1

摘要 通过对江汉水牛(Bubalus bubalus cv.Jianghan)主要屠宰性能的测定,并与我国地方水牛品种德宏水牛(B.bubalus cv.Dehong)、福安水牛(B.bubalus cv.Fuan)的主要屠宰性能指标进行比较,探究了江汉水牛的屠宰性能表现。结果显示,江汉水牛平均活重为487.9kg,平均胴体重为262.4kg,平均眼肌面积为45.2cm2,平均骨重为52.8kg,平均屠宰率为53.80%,平均屠体净肉率为43.03%,平均胴体净肉率为79.99%,平均肉骨比为4.01。江汉水牛的宰前活重、净肉重均高于德宏水牛和福安水牛;屠宰率比德宏水牛低4.46个百分点,比福安水牛高3.38个百分点。这些特点说明江汉水牛具有较大的肉用潜力。 The slaughter performance of Bubalus bubalus cv.Jianghan was determined and compared with those of Chinese local buffalo species B.bubalus cv.Dehong and B.bubalus cv.Fuan.The results revealed that the average living weight of B.bubalus cv.Jianghan was 487.9 kg;average naked body weight was 262.4 kg;average area of muscular apparatus was 45.2 cm2;average bone weight was 52.8 kg;average abatage rate was 53.80%;average carcass net meat rate was 43.03%,average naked body net meat rate was 79.99%;and average ratio of meat to bone was 4.01.The living weight and net meat weight of B.bubalus cv.Jianghan before abatage were higher than those of B.bubalus cv.Dehong and B.bubalus cv.Fuan.The abatage rate of B.bubalus cv.Jianghan was 4.40% less than that of B.bubalus cv.Dehong,but 3.38% more higher than B.bubalus cv.Fuan.These characteristics indicated that B.bubalus cv.Jianghan has the potential for producing meat.
