摘要
以天然沸石、活性炭、皂土分别负载壳聚糖制成壳聚糖固体澄清剂对野木瓜果汁进行澄清处理。实验通过对野木瓜果汁基本成分的测定和紫外谱图来确定最佳澄清效果,在单因素试验基础上,用正交试验优化了野木瓜果汁澄清工艺。实验结果表明:皂土负载壳聚糖澄清剂的添加量为0.50g/100mL,搅拌时间为1min的条件下,野木瓜果汁的透光率最高,为89.78%,在此最佳澄清工艺条件下,对野木瓜果汁的澄清效果最好。
In this paper, natural zeolite, activated carbon, bentonite supporting chitosan are used as chitosan solid clarified agent for clarifying the Chaenomeles cathayensis juice. The amount of clarifying agent and stirring time for the process are optimized. Finally, the best clarification is choosed by fundamental components determination and UV spectrum. The results show: the clarifying agent of bentonite supporting chitosan adds the amount of 0.50 g/100 mL, stirring time is 1 min, under this condition, light transmittance of Chaenomeles cathayensis juice is up to 89.78%, it is relatively good and obvious to clarify Chaenomeles cathayensis juice.
