摘要
目的:本文建立乳制品中皮革水解蛋白含量的测定方法。方法:采用比色法定量检测乳制品中添加的动物胶原水解蛋白,先测得羟脯氨酸的质量浓度,再由测得的羟脯氨酸换算出乳制品中添加的动物胶原水解蛋白的含量。结果:比色法测定乳制品中添加的动物胶原水解蛋白,回归方程y=6.628x-0.1237,r=0.9994,回收率均值为109.2%,RSD为4.0%。结论:该方法操作简便、快速、重现性好,适用于乳制品中添加的动物胶原水解蛋白含量的测定。
Purpose: To establish the way to test content of leather hydrolyzed protein in dairy products. Method: Colorimetry was used to test quantitatively animal collagen hydrolyzed protein in dairy products. Firstly Colorimetry was used to test mass density of Hydroxyproline, and calculate the content of animal collagen hydrolyzed protein in dairy products according to mass density of Hydroxyproline. Result:Colorimetry was used to test animal collagen hydrolyzed protein in dairy products, Regression Equation y=6.628x-0.1237,r=0.9994, mean of recovery was 109.2%, RSD was 4.0%. Conclusion:The method had advantages such as easy-operation, fast and good reproducibility, etc, It was very much suitable to test animal collagen hydrolyzed protein in dairy products.
