简述了生鲜面的产品特点,重点针对生鲜面的保鲜问题,介绍了现有的常规保鲜方法,并探讨了一些适合生鲜面特点的新型保鲜方法,为开发行之有效的保鲜工艺提供参考,以期促进生鲜面在国内外市场的成熟。
Product features of fresh noodles were described in brief, existing conventional methods for fresh noo- dles preservation were introduced and some new type preservation methods suitable for characteristics of fresh noodles were discussed, so as to provide a reference for development of effective preservation technology, expecting to promote the maturity of fresh noodles in domestic and foreign markets.
