鲜海带保存方式对褐藻胶含量及黏度的影响

摘要 [目的]延长化工用鲜海带使用周期,实现海带的规模化存贮。[方法]将不同尺寸的海带样品保存在浓度2%的甲醛溶液中,考察海带碎块大小以及化学物质的添加对海带中褐藻胶含量和黏度的影响。[结果]在浓度2%的甲醛溶液中,大块海带样品的褐藻胶得率和黏度要明显高于小块海带;化学物质的加入会加速海带中褐藻糖胶、褐藻淀粉等可溶性物质的溶出,化学试剂CaCl2的添加有助于提高保存海带中褐藻胶得率。[结论]建议在规模化海带保存过程中采用大块海带浸醛法(浓度2%甲醛溶液),以保证海带中褐藻胶的黏度和收率,达到理想的保存效果。 [Objective]The application cycle of the kelp in chemical industry would be prolonged based on the realization of its large scale storage.[Method]The pieces of kelp with different sizes were conserved in 2% formaldehyde solution in order to investigate the influence on the content and viscosity of alginate.[Results]In 2% formaldehyde solution,the content and viscosity of alginate in the large pieces of kelp were significantly higher than in the small pieces of one.The chemical reagent could accelerate the release of the soluble substance such as fucoidan,alginate,starch and others in kelp and the addition of CaCl2 into formaldehyde solution could be beneficial to the improvement of alginate production in conserved kelp.[Conclusion]It was proposed that in the preservation process,large piece of kelp soaked in 2% formaldehyde solution could ensure the desired preservation efficiency on its alginate viscosity and yield.
