紫外分光光度法分析测定“黑美人”土豆原花青素 被引量:13

摘要 [目的]测定"黑美人"土豆中的原花青素的含量,比较其与其他市售蔬菜中原花青素的含量,确定其营养价值和保健功效。[方法]用75%的乙醇溶液作为提取剂,按照料液比为1:9.14的比值在70℃的恒温水浴中提取30min,采用紫外分光光度法测定提取液中原花青素的含量。[结果]原花青素在3.1~31.0μg/ml浓度范围内有良好的线性关系,其回归方程为A=0.00341+0.0081C,R=0.99866,精密度良好(RSD=0.21%),平均回收率为97.8%~101.5%,符合分析方法要求。[结论]"黑美人"土豆富含原花青素,其含量远高于其他市售蔬菜,为其在营养保健、食品、医药等领域的广泛应用提供了理论支持。 [Objective]The aim was to determine the content of proanthocyanidins in Heimeiren potatoes and the nutritional value and sanitarian effect through comparing the content of proanthocyanidins with other vegetables in market.[Method]Proanthocyanidins was determinated by ultraviolet spectrophotometry after it was extracted by 75% ethanol at 70 degrees of temperature in water-bath for 30 min,the extration parameters was that 1:9.14 of the rate of vegetables to 75% ethanol.[Results]The linear region was 3.1-31.0 μg/ml,the regression equation was A=0.003 41+0.008 1C,regression coefficient was 0.998 66.The average recovery ratio(n=3)was between 97.8% and 101.5%,RSD=0.21%.Thus the method was applied to determine proanthocyanidins and obtained a good result.[Conclusion]Heimeiren potatoes are rich in proanthocyanidins,and the content of it was higher than other vegetables in market,it will provide theory support for the extensive use of "hei mei ren" potatoes in the areas of nutrition and health protection,food and medicine.
