摘要
鸡骨是一种有开发前景的食品资源,本文介绍了鸡骨的营养特性,详细阐述鸡骨明胶、鸡骨蛋白水解物、鸡骨素及鸡骨泥的加工工艺和研究结果。并对鸡骨的综合利用进行展望。
Chicken bone is a food resource of development prospect.In this research,the nutritional characteristics of chicken bone,chicken bone gelatin,chicken protein hydrolysate,and chicken bone mud processing technology were described,while the research results were elaborated.Furthermore,the comprehensive utilization of the chicken bone was prospected in this paper.
