摘要
为建立养殖大黄鱼低温干燥的工艺条件,通过单因素分析和响应面试验设计,对影响干燥工艺的温度、时间和相对湿度三因素进行考察。以酸价、过氧化值、硫代巴比妥酸值(TBA值)及水分含量为单因素试验指标,分析其干燥结果;响应面试验以TBA值为响应值。试验结果表明最优工艺条件是:干燥温度24.1℃、时间7.47h、相对湿度36.1%。
To establish an low-temperature drying technology of Pseudosciaena crocea.The single factor test and the response surface method were used to optimize the drying conditions.The effects of different drying temperatures,time and relative humidity on the drying result of the Pseudosciaena crocea were investigated.The acid value、peroxide value、thiobarbituric acid value(TBA) and moisture content were taken as evaluating index in the single factor test,and the thiobarbituric acid value were taken as response ralue in the response surface test.The result was as follows:The optimum drying conditions were drying 7.47 h under the temperature 24.1 ℃ and relative humidity 36.1%.
