摘要
超高压装置是高压食品研制、开发、生产的关键设备．能否提供性能优良、价格相对适中的高压装置是高压食品产业化的关键．本文系统介绍了食品高压处理的方法及高压处理装置，并就高压技术在食品工业中的发展方向提出了几点建议．
High pressure equipment is the most important equipment to study,development and produce high pressure food.The key of processing high pressure food is whether there is a high pressure equipment which has fine function and moderate price. The means and the equipment of processing high pressure food have been introduced systematically in this paper.Then several suggestions are made on developing direction of high pressure technology in food processing.
