活性乳酸菌微胶囊制备工艺的优化 被引量:3

摘要 为提高被摄入人体的活性乳酸菌的活菌数,以微胶囊的形式对活性乳酸菌进行包埋,以多孔淀粉为内芯材,选取海藻酸钠、糊精、明胶为外壁材制成微胶囊,利用乳酸菌活菌计数法测定吸附包埋效果。通过正交试验,优选最佳包埋条件为:多孔淀粉5%,海藻酸钠2%,明胶4%,糊精5%,产品活菌数可达7.34×108cfu/g,包埋产率可达86.3%。 For improving the live bacteria of activity lactobacillus, the activity lactobacillus was impacted by microscopic capsule, the porous starch was used as the internal core material, and sodium alginate, dextrin and gelatin were selected for the outer materials, the viable count procedures of the lactobacillus to determine embedding effects. The optimum conditions for the best embedding by the orthogonal experiments were as follows: porous starch 5%, sodium alginate 2%, gelatin 4%, dextrin 5%. The live bacteria could be reached to 7.34 ×10^8 cfu/g, and the yield rate of the product could reach up to 86.3%.
