摘要
[目的]测定泰山块菌氨基酸的含量。[方法]用氨基酸自动分析仪测定泰山块菌水解后的氨基酸。[结果]共测出18种氨基酸,氨基酸总量为14.66mg/100mg,含量最高的为谷氨酸,达2.166mg/100mg;有7种人体必需氨基酸,占氨基酸总量的36.63%。[结论]泰山块菌有很高的药用价值和保健功能,开发前景广阔。
[Objective] To determine the content of amino acids in fruitbody of Protubera borealis Imai.[Method] The hydrolyzed amino acids in the fruitbody of P.borealis Imai.were determined by automatic amino acid analyzer.[Results] The fungui of P.borealis Imai.contained 18 kinds of amino acids.Total amino acids were 14.66%,including glutamic acid which content was the highest（2.17 mg/100 mg）,and seven kinds of the essential amino acids were 36.63% of the total amino acid.[Conclusion] The fungui of P.borealis Imai.have maximum nutritive value and health effect,and have vast market prospect.
