太湖鹅血浆生化指标、屠宰性能及肉品质的研究 被引量:5

摘要 通过测定40只太湖鹅的13个血浆生化指标及屠宰性能和肉品质,分析了血浆生化指标与屠宰性能和肉品质之间的相关性.结果表明:丙氨酸氨基转氨酶(ALT)与腹脂率呈极显著负相关(P<0.01);碱性磷酸酶(ALP)与胸肉率呈极显著负相关(P<0.01);肌酐(CRE)与腿肉肉色、pH值呈极显著正相关(P<0.01);试验表明,ALT、ALP和CRE可以作为辅助标记,实现对太湖鹅的腹脂、胸肌率等产肉性能的早期选育. 13 blood biochemical parameters,slaughter performance and meat quality of 40 Taihu goose were measured,and the correlations between blood biochemical parameters and slaughter performance and meat quality were analyzed.The results showed that alanine aminotransferase(ALT) and abdominal fat percentage was significantly negatively correlated(P0.01);alkaline phosphatase(ALP) and the brisket rate was significantly negatively correlated(P0.01);creatinine(CRE) and the legs of venison meat color,pH was highly significant positive correlation(P0.01).ALT,ALP and the CRE can serve as secondary marks to realize early selection of Taihu goose in abdominal fat,breast muscle meat production rate.
