摘要
以蔗糖为例进行甜度味觉阈值研究。通过对年龄在17-19岁的多人蔗糖感觉阈值和最大阈值的测试发现:感觉阈值女性略低于男性,最大阈值女性略高于男性,女性的甜度敏感区域比男性的略大,同龄女性味蕾细胞数比男性要多。比较精确地计算出能感知甜味的味蕾细胞数,为蔗糖甜味呈味生理研究提供一定的依据。
This paper describes a study on threshold of sweet sensation by taking sucrose as a research subject.Through the tests on sensation threshold and the maximum threshold of people between ages of 17-19 to sucrose,it can be concluded that the sensation threshold of females is a little lower than that of males,the maximum threshold and sweet sensitive area of females are a little higher than those of males,and the amounts of taste bud cells for females are more than those for the same age males.Comparatively accurately calculating the amounts of taste bud cells,which can sense sweetness,provides cetain supports for physiology study on flavor development of sucrose sweetness.
