果树多酚类物质生理功能及应用研究进展 被引量:12

摘要 果树多酚物质是一类广泛存在于果树体内及果实器官中的重要次生代谢产物,对树体生长发育及适应性有一定的调节作用,可有效抵御低温及病虫害。果树多酚物质具有独特的理化性质,因而在食品、医疗、饲料添加及环保等各个领域有着广阔的应用。作为可再生的纯天然产物,果树多酚类物质在未来的循环型经济结构中发挥着巨大作用,它与人们的生产和生活的关系将更加密切,应用前景将更加广阔。今后的发展趋势主要集中在果树植物多酚结构与性能的关系、果树植物多酚的衍生化研究及深化果树多酚在医疗保健机理方面的研究等。该文仅就果树多酚类物质的生理功能和应用作一综述,为深入研究开发利用果树多酚提供相应的参考。 Polyphenols of fruit tree was one of the important secondary metabolic substances and exist widely in fruit trees and fruit organs. It made the plant could prevent low temperature, diseases and pests. There were some regulatory effects on the growth, development and adaptability of fruit trees dependent the effect, and which play an important part in various fields such as food, medical, feed and environmental protection in future because of their unique physiological and biochemical properties. As a pure natural product which was renewable, the polyphenols form fruit tree would be playing the tremendous role in future in our cyclic type economic structure. The relations of this material would be closer to the people's production and the life, and the prospect of application would be broader. Present situation and trend are as follow: (1) the relations of structure and the performance of polyphenol, (2) Study of derivatization reaction of fruit tree polyphenol and (3) the deepened in the healthcare mechanism aspect research and so on. The study and application of physiological and biochemical function of polyphenols of fruit tree were summarized in the article, which can provide corresponding reference to development and utilization polyphenols of fruit tree further.
