摘要
采用壳聚糖、海藻酸钠和黄原胶为涂膜材料,按照L9(34)正交试验制作不同配比的壳聚糖复合膜,对莲藕进行涂膜保鲜。结果表明:壳聚糖复合膜的最佳配比为壳聚糖0.9%、海藻酸钠0.1%、黄原胶0.08%时,可有效保持莲藕的感官品质,可将莲藕的失重率保持在28%以下,呼气强度的峰值保持在26%以下,12d时可滴定酸含量(TA)0.11%、可溶性固形物含量(SSC)4.9%和VC(12.06mg/100g)的损失量得到有效的控制,壳聚糖和黄原胶的保鲜效果达到显著水平。
Using chitosan, sodium alginate, xanthan gum based on the orthogonal experiment of L9 (3^4 ) to make different matching chitosan compound film in order to make fresh-keeping of fresh-cutting lotus root. The result showed that the best optimization of chitosan compound film were 0. 9% ehitosan, 0. 1% sodium alginate and 0.08% xanthan gum, chitosan compound film could keep high sensory quality of lolus root, reduce the weight loss rate and respiratory intensity of lotus root, decrease the titratahle acid of lotus root and lbe loss of soluble solid contents and Vc conlents, the effect of chitosan and xanthan gum fresh keeping reach to significant level, but the effect of sodium alginate fresh keeping were not obviously.
