摘要
为研究不同浓度壳聚糖在冷藏条件下对带鱼品质变化的影响,将生鲜带鱼清理,经冰水洗净沥干后切成6~7cm长段,用不同浓度的壳聚糖溶液涂膜,然后分装于PE保鲜袋中,立即放入4℃下贮藏。以感官评分、细菌总数、挥发性盐基氮(TVBN值)、pH、硫代巴比妥酸(TBA值)为指标,测定带鱼冷藏过程中的品质变化。结果表明,壳聚糖涂膜能较好地维持带鱼的鲜度,抑制细菌的增长,延缓TVBN,TBA值及pH的升高。其中,1.0%壳聚糖涂膜对带鱼保鲜效果最好,相对于4℃冷藏条件,涂膜结合冷藏能将带鱼的一级鲜度延长2~3d,二级鲜度延长6~7d。
The effects of different concentrations chitosan to the quality changes of trichiutus haumela in cold storage were investigated. The hairtail samples were gutted and washed, and cut into piece of 6-7 cm long. And then, they were packed in the PE bag and stored at 4 ℃ immediately. The sensory evaluation values, total bacteria count, total volatile base nitrogen( TVBN ), pH value, the 2-thiobarbituric acid (TBA) were used to evaluate the fish quality during the cold storage. The result indicated that the total bacterial count, TVBN, pH value and TBA of samples coaled with chitosan could be kept in good values significantly, and sensory evaluation values decreased slowly as well. The shelf-life of the coated samples were prolonged 2-3 days with the first fresh grade freshness and 6-7 days for the second fresh grade compared with that of samples under cold storage of 4 ℃.
