摘要
研究了提取食用菜籽蛋白的新工艺,提出了菜籽蛋白的应用途径,经检测产品不含硫甙,并且植酸含量低,色浅味谈。
A new processing scheme has been developed for the extrcation and separation of edible rapesees protein. The application of rapeseed protein has been studied also. The product contains no glucosinolates, low in phytates,light in color and bland in taste.
