摘要
本文综合论述了鱼油中的主要成分w-3高不饱和脂肪酸—EPA和DHA的结构特征、分布状况,较为详细地阐述了它们的保健功能与机理,简要介绍了鱼油产品的开发以及目前生产消费中存在的问题,展望了鱼油保健品的应用前景。
This paper introduces the resources and molecular structure of two w-3 polyunsaturated fatty acids-EPA and DHA and discusses in detail their physiological functions. The concentration and purification of fish oil, the problems presented in production and consumption and the prospect of its application are also covered in the paper.
