摘要
目的:了解舟山市场上牡蛎中创伤弧菌污染状况,为预防创伤弧菌引起的食源性疾病做好预警,并对食用牡蛎的安全性评估提供科学依据。方法:从2007年7月至2008年6月分四次先后分别在舟山定海西码头和嵊泗县定海南珍菜场等农贸市场共采集40份牡蛎样本,经碱性蛋白胨水增菌,选择性培养基筛选培养,并通过生化鉴定、核酸检测进行定量检测分析。结果:在22份牡蛎样本中检出创伤弧菌,阳性率为55%,平均MPN值和最高MPN值分别为686.72 MPN/g和4600 MPN/g。结论:舟山市售牡蛎中创伤弧菌的污染情况严重,需对牡蛎的食品安全进行风险性评估,预防因生食牡蛎而导致的食源性疾病的暴发。
Objective:To know the foodborne diseases caused by Vibrio vulnificus in advance to provide the scientific data for the risk assessment of the oyster consumption.Mehtods:40 samples of oyster were collected from the West Dock market in Dinghai and the Nanzhen market in Shengsi from July 2007 to June 2008 by four times and quantitatively analyzed by the biochemical test,nucleic acid detection to identify the strains isolated from the raw oyster with the enrichment in alkaline liquid medium and culture in the selective medium.Results:The prevalence of Vibrio vulnificus was detected in 22 samples,the mean MPN value and maximum MPN value were 686.72MPN/g and 4600MPN/g,respectively.Conclusion:The raw oyster on Zhoushan markets is contaminated by the Vibrio vulnificus seriously.To prevent the foodborne disease outbreak caused by the consumption of raw oyster contaminated with Vibrio vulnificus,and the risk assessment of the oyster are needed.
