摘要
本文选择长春市四季有代表性的叶菜类、瓜果类和根茎类蔬菜,用分光光度法测定亚硝酸盐含量,探讨不同季节蔬菜中亚硝酸盐含量的变化规律。结果表明:依春、夏、秋、冬四季蔬菜亚硝酸含量呈递减趋势;其中黄瓜变化幅度最大,春季为冬季的44倍;不同的蔬菜亚硝酸盐含量变化不同,这主要是由蔬菜的种类和外部条件决定的。
In my paper, selection leaf vegetables, fruits and root vegetables category as a representative term in Changchun City, determination the Nitrite content with spectrophotometric and discussion change discipline of vegetables Nitrite content in different seasons . results have shown that Nitrite content decreased from spring to winter, for cucumber Nitrite content has the bigest change, even , which spring is 44 times as winter Nitrite content; however, different vegetables has different nitrite content, mainly from vegetables category and external conditions.
