摘要
研究了ε-聚赖氨酸(ε-PL)在不同温度、pH、盐离子浓度条件下的稳定性及ε-PL适宜的贮存条件.结果表明:ε-PL在121℃处理60 min仍具有优良的热稳定性;在pH 4.0~7.5时ε-PL相对抑菌活性高于95%,但在pH 8.0~9.0时其相对抑菌活性下降约15%;Na+、NH4+、Mg2+对ε-PL的相对抑菌活性无影响;而Ag+、Fe2+、Cu2+浓度大于0.8 mol/L时,这些盐离子对供试菌的毒害作用显著于ε-PL的抑菌作用.ε-PL适宜的贮存条件是避光、低温,其稳定率大于97%.
The stability of ε-polylysine(ε-PL)at different temperature,pH,concentrations of salt irons and the appropriate storage conditions of ε-PL were studied. The results indicate that ε-PL remains excellent thermal stability even with the treatment of 121℃ for 60 min. The relative antimicrobial activity of ε-PL is more than 95% during pH 4.0-7.5,however the relative antimicrobial activity decreases by 15% or so at pH 8.0-9.0. Na^+,NH4^+ and Mg2^+ have no effect on the relative antimicrobial activity of ε-PL ,whereas the poisonous impact of Ag^+,Fe^2+ and Cu^2+ on the tested strains is more prominent than the antimicrobial activity of ε-PL when the concentrations of these metallic irons are more than 0.8 mol/L. The favorable storage condition for ε-PL is dark environment and low temperature,and the stability rate is more than 97%.
