The production of poly-ε-lysine and its application in food industry

摘要 ε-聚赖氨酸是一种天然、无毒的聚氨基酸,被广泛应用于食品、化工、生物医药等多个领域。本文综述了ε-聚赖氨酸的微生物生产及其作为一类新型的食品防腐剂、乳化剂、食疗剂在食品工业中的应用,并对其开发和应用前景作了展望。 Poly-ε-lysine is a kind natural and innocuous Poly-amino acid. it has been widely used in many fields, such as food, chemical, biomedicine and so on, This paper reviews the production of ε-PL by microbial fermentation and its application as food preservatives, emulsifying agent, dietary agent. The prospect of its exploitation and potential application is also discussed.
