摘要
对κ-卡拉胶进行氧化降解,得到两种卡拉胶寡糖(L-O-KC和H-O-KC);对κ-卡拉胶进行酸降解,得到两种卡拉胶寡糖(L-H-KC和H-H-KC);对产物进行IR表征,并对其抗氧化性能进行测试。结果表明:酸降解得到的卡拉胶寡糖对超氧阴离子自由基O2-·及过氧化氢的清除能力强于氧化降解得到的卡拉胶寡糖。
Two κ- carrageenan oligosaccharides ( L- O- KC, H- O- KC) were prepared by oxidative degradation, the other two κ- carrageenan oligosaccharides ( L- H- KC, H - H - KC) were achieved by acidic degradation.The products were characterized by FI- IR.The antioxidant activities of the carrageenan oligosaccharides were investigated.The carrageenan oligosaccharides by acidic degradation exhibited higher antioxidant activity than the oligosaccharides by oxidation degradation in scavenging superoxide anion and H2O2.
