摘要
经过氧乙酸浸泡消毒或沸水中瞬间(5~7s)消毒后,用液体石蜡、凡士林、聚乙烯醇配成的不同涂膜剂对鸡蛋进行了涂膜保鲜研究。结果表明,无论先经过氧乙酸浸泡消毒或沸水中瞬间消毒,用加有50g·L-1凡士林的液体石蜡混合涂膜剂涂膜后保鲜效果最好,在25℃、80%~85%相对湿度条件下存放,经90d鸡蛋仍保持新鲜,失重率仅为2.62%或2.38%.
We studied the preservation of eggs with smear of liquid paraffin or Vaseline or polyvinyl alcohol after sterilization at normal temperature.The results showed that the best effect of preservation could be obtained with smear of liquid paraffin and Vaseline (95∶5) in spite of sterilization of eggs either with peracetic acid or in boiling water.The eggs still were fresh with little loss of weight (2.62% or 2.38%) after 90day storage at 25℃ and 80%-85% relative humidity.
