摘要
目的考察壳聚糖澄清苹果汁的效果,探讨影响澄清工艺的因素,确定壳聚糖澄清果汁的最佳条件。方法以澄清果汁720 nm处的透光度评价各条件,比较各因素的较优水平。结果温度40℃,壳聚糖用量0.15 g/L,时间1 h,pH3时壳聚糖澄清苹果汁的效果最佳,果汁的营养成分和风味不受影响。结论壳聚糖可用于果汁澄清工艺。
Objective To investigate the influence of chitosan on the clarity of apple juice and determine the optimal clarity conditions. Methods The percent transmittance of apple juice obtained by spectrophotometer at 720 nm was used to determine the better clarity conditions. Results The optimum conditions for the clarity of apple juice were as follows: 0.15 g/L chitosan at 40℃ for 1 h, pH 3. Under the above conditions, the nutritional ingredients and the taste of apple juice were not changed. Conclusion The chitosan can be used for the clarity of apple juice.
