Study on the phosphorylation of fibroin with sodium tripoly phosphate

摘要 采用三聚磷酸钠对丝素蛋白进行化学修饰,研究丝素蛋白浓度、三聚磷酸钠用量、反应温度、反应时间、pH值对丝素蛋白磷酸化程度的影响。通过正交实验确定磷酸化的适宜条件,探讨磷酸化对丝素蛋白功能性的影响。通过对各种因素的分析确定磷酸化的适宜条件为:丝素蛋白浓度2.5%,三聚磷酸钠用量10%,温度40℃,pH9.0,反应时间20min。丝素蛋白经磷酸化修饰后,起泡特性与乳化特性均都有不同程度的改善。 The article studies the effects of concentration of fibroin,concentration of sodium tripoly phosphate, pH, heating temperature, and heating time on the phosphorylation of fibroin. The results showed the suitable conditions were: concentration of fibroin was 2.5%; pH was 9.0, concentration of sodium tripoly phosphate was 10%, heating temperature was 40 ℃, heating time was 20 min. The foaming property and emulsifying property increased after fibroin was phosphorylated.
