包埋缓冲盐笼架法培养乳酸菌的研究

Study on cultivating the lactic acid bacteria with framing embedded buffer salt

摘要 为制备高效浓缩乳酸菌发酵剂,采用包埋缓冲盐法培养乳酸菌,以中和培养基中的乳酸,提高活菌数。在500mL烧杯中,放置多层框架,向框架上放置片状的CaCO3缓冲盐包埋片,将培养的过程放大,并考察不同包埋片数目对培养基中pH值、酸度、活菌数的影响。结果表明,在放置11层缓冲盐包埋片培养时,培养液的pH值最高,酸度最低,活菌数最高,达到21.84×108cfu/mL,是对照的4.3倍。 In order to prepare high effective concentrated lactic acid bacteria starter, the experiment cultured lactic acid bacteria with embedded buffer salt to neutralize the lactic acid in the medium and the living lactic acid bacteria number was improved. In the experiment, a multi-layer frame on which the embedded CaCO3 buffer salt layers were put was placed in a 500 mL beaker, which enlarged the culture. And the different numbers of buffer salt layers effect on the pH, acidity, living bacteria number in the medium was studied. The result is that when the number of the buffer salt layers reaches 11, the pH in the medium is the highest, the acidity in the medium is the lowest, the number of the living bacteria is the highest, which reaches 21.84×10^8 cfu/mL and the number is 4.3 times more than the blank experiment.
