摘要
我国是一个植物资源大国，山野菜资源十分丰富。本文概述了我国的山野菜资源的现况、加工方法、加工工艺和利用研究。
China is rich in plant resources,of which edible wild vegetables are considered as a kind of nutrient and healthy food.This paper gives a general review of the edible wild vegetable resources,their maintaining methods,processing techniques and utilization in China.Suggestions on how to protect and utilize rationally these resources are offered.
