荧光法研究姜黄素和水解胶原蛋白的相互作用 被引量:2

Interaction Between Curcumin and Collagen Protein Hydrolysate by Fluorometric Method

摘要 用荧光光谱法研究了姜黄素对胶原蛋白、含硝酸亚铈的胶原蛋白的猝灭作用,计算了其结合常数、结合位点数和热力学函数。结果表明,姜黄素与胶原蛋白及含亚硝酸亚铈的胶原蛋白猝灭机理均为静态猝灭,均有一个结合位点;姜黄素与胶原蛋白之间的主要作用力为静电引力、姜黄素与含硝酸亚铈的胶原蛋白之间的作用力主要为疏水作用力。 Quenching effect of the interaction of curcumin with collagen and collagen containing cerous nitrate was respectively investigated by fluorometric method. The binding constant, binding site and thermodynamics function were calculated. The results showed that the interaction of curcumin with collagen and collagen containing cerous nitrate are both static quenching, and there is a binding site in them respectively. The main interaction force between curcumin and collagen is electrostatic attraction, however, the main force between curcumin and collagen containing cerous nitrate is the hydrophobic force.
