玉米醇溶蛋白膜的抗氧化和抑菌作用研究 被引量:5

摘要 研究了玉米醇溶蛋白膜对猪肉脂肪的抗氧化作用和对鲜牛肉的抑菌作用,试验结果证明玉米醇溶蛋白膜对所包裹的猪肉脂肪有很好的延缓氧化作用,α-生育酚对膜的抗氧化效果有增效作用。同时,玉米醇溶蛋白膜对鲜牛肉中的微生物有较好的抑制作用,丁香提取物能够增强膜对冷却牛肉的抑菌效果。 The oxidation resistance of zein film for pork fat and antimicrobial activity for fresh beef are studied. It is found that zein film can restrain fat oxidation and its antioxidative effect can be increased with α- tocopherol. It is also proved that zein film has good antimicrobial activity for fresh beef and its antimicrobial effect can be enhanced by adding clove extract.
