摘要
采用酶解的方法，对提取大麦中β-葡聚糖进行了探讨，并对提取产品中的还原糖和β-葡聚糖进行了分析。提取物还原糖含量为零，β-葡聚糖的含量为91％。
EXtracting β-glucan form barely by enzymatic method was studied and the extracted product was analysed． The content of β-glucan was 91％and no reducing sugar．
