摘要
阐述了多种蔬菜脱水技术,比较了其优缺点。重点论述了真空冻结干燥技术原理、方案选择。对冻干制品的质量要求、标准的制定提出了建设性意见,对我国脱水蔬菜工业的发展具有参考价值。
