摘要
郫县豆瓣历史悠久,在调味品中占着重要地位,也是烹饪川菜必不可少的调味品,长期以来享有"川菜之魂"的美誉。郫县豆瓣是有地域范围的豆瓣辣酱,属于酱类范畴,它依赖四川郫县优越的人文、饮食、气候、地理、环境条件及独创性的生产技艺,历经三百余年岁月的演变、沉淀、锤炼、升华、自成一家、长盛不衰,深受国内外消费者喜爱和同行的广泛关注与认同。郫县豆瓣属四川省成都市郫县现辖行政区域内生产,以鲜红辣椒、蚕豆为主要原料,食用盐、小麦粉为辅料,按传统工艺酿制而成的调味品。本人着力探讨、研究郫县豆瓣的产品特点、工艺特征、纯种分离及生产应用。
Pixian Douban has a hundreds of year's history, which plays an important role in condiments production, and is the main seasoning of Siehuan Cuisine, knowing as the "soul of Sichuan Cuisine". Pixian Douban is a special kind of bean paste with geographical scope, belonging to the scope of soy source. Accompanying with the brilliant culture, dietary, climate, geography and environment in Pi County and its special processing technology, after 300years evolution, the bean paste is widely concerned and accepted by domestic and foreign customers. Pi County and its administrative region are entitled to produce the product of Pixian Douban, the condiment, which is produced according to the traditional brewing technology, using chili and horsebean as the main materials, salt and wheat powder as the supplementary materials. In this research, the author discussed the product characteristics, process characteristics and purebred of Pixian Douban.
