天然食品来源的血管紧张素转换酶抑制肽的研究进展 被引量:31

摘要 血管紧张素转换酶 (ACE)在血压调节中扮演着重要的角色。最近抑制肽的研究在食品医药界倍受关注 ,ACE抑制肽通过抑制血管紧张素Ⅰ向血管紧张素Ⅱ的转换以及阻止ACE使激肽失活而起到降压作用。利用某些蛋白酶对食品蛋白质进行定向水解或通过微生物发酵可产生具有降压作用的活性短肽 ,现在人们已从许多蛋白质源中分离到了各种ACE抑制肽。此文对近年来天然食品蛋白质来源的ACE抑制肽的研究进展做一简介。
