摘要
研究分析了不同的包装形式、添加自由基清除剂以及在贮藏过程中对辐照棕榈酸及牛肉中辐解产物2-十二烷基环丁酮变化规律的影响。采用硅胶层析柱-气相色谱/质谱联用技术萃取分离和检测2-十二烷基环丁酮。结果表明,隔光包装会显著降低辐照样品中2-十二烷基环丁酮的产生,减少包装内氧气含量并不能导致2-十二烷基环丁酮的含量减少,随着贮藏时间延长,不同包装形式内2-十二烷基环丁酮的变化趋势基本一致。添加自由基清除剂可以明显降低样品中2-十二烷基环丁酮浓度,随着贮藏时间延长这种作用逐渐减弱。
The changing rules of 2-dodecylcyclobutanone according to different package styles and adding free radical scavenger in irradiated beef during storage were investigated. 2-dodecylcyclobutanone was extracted and separated by silica gel column and analyzed by capillary column gas chromatography-mass spectrometry (GC-MS). The results show that package with preventing from light can induce an appreciable lowering of the concentration of 2-dodecylcyclobutanone formed in irradiated beef, but preventing from oxygen does not have the same effect. The effects of different packaging atmosphere (Nz, vacuum, and air) on the stability of 2-dodecylcyclobutanone are almost similar during storage. The concentration of 2-dodecylcyclobutanone can be decreased significantly by adding free radical scavengers, and it will be weakened, however, as the storage time extended.
