摘要
研究枸杞色素的提取工艺及其稳定性。结果表明,提取色素的最大吸收波长在450nm。提取该色素的最佳工艺条件为:在50℃下,用无水乙醇,以1g∶12mL的料液比,浸提1h。该色素具有良好的热稳定性;在酸性较强的环境下色素受光降解率较大,在弱酸性及中性偏碱的环境下受光降解率较小;该色素在3.8<pH<9.9的环境下较稳定;Na+和Zn2+对色素几乎无影响,而Al3+会降低色素的稳定性。
The extraction craft and stability of Fructus Lycii pigment were studied. The result indicated that the pigment has the strongest absorption peak at 450 nm, the optimum extraction condition was: the absolute alcohol, the 1 g: 12 mL material fluid ratio, and extracted for 1 hour under 50℃. The pigment has a good thermostability; the degeneration rate under the strong acid condition was bigger than the weak acid condition and the alkalescence condition. The pigment was stable at 3.8 〈pH〈9.9 .Na^+ and Zn^2+ nearly do not have the influence to the pigment, but Al^4+ can reduce the pigment stability.
