摘要
海藻糖是一种由两分子葡萄糖以α,α-1,1键缩合而成的非还原性二糖,具有独特的抗冷冻保护作用、抗脱水保护作用等生物学功能。通过海藻糖在冷冻肉中的应用研究,结果表明:海藻糖能降低冷冻肉的液汁流失率,改善冷冻肉的品质。
Trehalose is a disaccharide consisting of 2 glucose units linked by α,α-1, 1-glucosidic bona,ana it nas unique biological functions of antifreezing and antidehydration.When analysing the application of trehalose in chilled perk,it was observed that the drip losses of different chilled pork during storage was reduced, trehalose could improve the qualities of chilled pork to some degree.
