摘要
选用适宜天津种植的9种甘薯,分别用水和乙醇浸提甘薯色素,研究不同品种甘薯色素的紫外可见吸收光谱性质。结果表明,紫甘薯美国黑薯、德国黑薯和京薯6号水溶性色素吸收的最大吸收波长分别为538.5nm、532nm和531.5nm,花心薯水溶性色素吸收的最大吸收波长为525nm,金海2号、日本黄薯、水果薯、苏薯8号、香蕉薯色素水浸提液没有吸收;美国黑薯、苏薯8号、德国黑薯、水果薯、香蕉薯、京薯6号、金海2号、日本黄薯、花心薯醇溶色素最大吸收波长分别为323、284.5nm,424.5、288.5nm,326、293nm,424nm,447.5、282.5nm,326.5、297nm,283.5nm,281.2nm,326.5、297nm。德国黑薯和京薯6号甘薯色素应为同一种色素。
The ultraviolet visible spectral characters of 9 sweet potatoes pigments from TianJin region were studied after those pigments were extracted by water or ethanol in the paper. The results showed that absorptions of water-soluble pigments from purple sweet potatoes such as American black potato, Germen black potato and Jing VI potato were 538.5 nm, 532nm and 531.5nm, absorptions of water-soluble pigments form umbilicus colored potato was 525 nm and no absorption existed in water-soluble pigments from golden sea Ⅱ, Japanese yellow potato, fruit potato, Su potato Ⅷ, banana potato. Absorptions of ethanol-soluble pigments from American black potato, Su potato Ⅷ, Germen black potato, fruit potato, banana potato, Jing Ⅵ potato, golden sea Ⅱ, Japanese yellow potato and umbilicus colored potato were 323, 284.5nm, 424.5, 288.5nm, 326, 293nm, 424nm, 447.5, 282.5nm, 326.5, 297nm, 283.5 nm, 281.2 nm, 326.5, 297 nm. The pigments from Germen black potato and Jing Ⅵ potato were same pigments.
