摘要
以金针菇菌丝体及其发酵液为主要原料,研制出金针菇液体发酵饮料。试验采用液体深层发酵技术,对金针菇菌丝体进行发酵培养,选出最佳发酵时间,以获得发酵液及菌丝体。通过正交实验和感官评定,调配出金针菇增智发酵保健饮料的最佳配方为:苹果酸0.08%,白砂糖8%,柠檬酸0.2%,果胶0.1%,CMC0.2%。
