摘要
通过研究菜籽饼粕蛋白质的组成、分子量以及利用等电聚焦技术测定各蛋白质组分的等电点，表明贵州菜籽饼粕蛋白质主要由球蛋白、清蛋白和醇溶蛋白质所组咸，其中清蛋白占２２．１％，球蛋白占６７．２％，醇溶蛋白仅占２．４％。
The compositions and molecular weights of rapeseed meal protein had been studied, and the isoelectric points of different protein were detected by isoelectric focusing. The proteins of Guizhou rapeseed meal were mainly consisted Of prolamine, globulin and albumen and accounted for 2. 4 %, 67. 2 % and 22. 1 % resistively. The study provided data for the comprehensive utilization of rapeseed meal.
