汕头贻贝中有毒有害物质污染状况分析 被引量:2

摘要 目的:通过对汕头贻贝中有毒有害物质的抽样调查,了解其食用安全性。方法:从加工厂、养殖场、市场采集116份贻贝,检测菌落总数、大肠杆菌、沙门菌、金黄色葡萄球菌、副溶血弧菌、单增李斯特菌、麻痹性贝类毒素、腹泻性贝类毒素、甲基汞、砷、铅等项目。结果:麻痹性贝类毒素、腹泻性贝类毒素、甲基汞、砷、铅、菌落总数、大肠杆菌等项目符合安全食用标准,而且总体水平较低;沙门菌、金黄色葡萄球菌、副溶血弧菌、单增李斯特菌等致病菌均未检出。结论:汕头的贻贝符合食用安全标准,但应注意跟踪汕头海域赤潮的发生与变化,以及重金属污染的程度。 Objective:To survey the security of Shantou sea-mussel as food,toxic and harmful substances in Shantou sea-mussel were analyzed by spot check.Methods:A total of 116 samples of sea-mussel were collected from processing factories,breed aquatics places and markets.Total bacterial count,Escherchia coli,Salmonella spp.,Staphylococcus aureus,Vibrio parahaemolyticus,Listeria monocytogenes,PSP,DSP,methyl mercury,inorganic arsenic,plumbum etc were determined.Results:PSP,DSP,Methyl mercury,As(Arsenic),Pb,total bacterial count,Escherchia coli were lower than the regulated criteria of China and concentrations were lower in general.Salmonella spp.,Staphylococcus aureus,Vibrio parahaemolyticus,Listeria monocytogenes were not detected.Conclusion:Shantou sea-mussel is safe for human health in general.Change caused by red tide in Shantou sea area and contaminative level of heavy metal should be noticed.
